Observation (CORRECTED DURING INSPECTION): Sandwich buns were noted stored in a garbage bag in the deli department.
Corrective Action(s): **Issue corrected at the time of inspection**
Sandwich buns were taken out of the garbage bag and stored in food-grade container during the inspection.
Do not store any food products in garbage bags as there are chemicals in the bags for minimzing scent that may be transferred to food and cause a chemical hazard for consumers.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Updated floor plan for the proposal of a cheese shredder in the deli department was submitted about a few weeks ago. Plan has not been approved as district Health Inspector was awaiting for an updated Sanitation Plan that would include instructions for cleaning and sanitizing this new machine. However, upon arrival at the facility, the cheese shredder was already installed and in-use.
Corrective Action(s): Manager of the deli department was able to explain how to clean and sanitize the cheese shredder, however besides the Manager, none of the food handlers are aware of the cleaning protocol. The machine was tagged out during the inspection. An updated SOP for the cleaning and sanitation of the cheese shredder will be emailed to the district Health Inspector for approval. Once approved, ensure all staff are trained before using the machine.

Routine inspection conducted today:
All handwash stations were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were noted at 4C or below.
Freezer unit was at -18C.
Hot hold unit was holding food at over 60C.
QUAT sanitizer spray bottle and wall mounted dispensers were noted with over 400 PPM QUAT.
All in-use utensils were noted sanitary and in good condition.
No signs of pest activities noted during the inspection.
