Observation (CORRECTED DURING INSPECTION): One container of Permicol Orange Red coloring observed on the storage shelf. Staff stated that this coloring is not used for any food items preparing in the kitchen at the time of inspection. Staff immediately voluntarily discarded the container of coloring from the shelf. Do not purchase Permicol Orange Red coloring as it is not approved for human consumption. Ensure to only purchase food colorings which fit for human consumption.

- Low temperature dishwasher chlorine residual at plate measured at 100 ppm
- Sanitizer bucket chlorine measured at 200ppm with cloth fully immersed
- No sign of pest noted at the time of inspection
- Food is stored at least 6 inches off the floor
- Chemical is stored away from food
- All hand sinks are equipped with hot/cold running water, liquid soap, and paper towel

Temperature:
- Walk-in cooler dough internal temperature at 3C
- Line cooler in the kitchen cheese internal temperature at 2C
- Line cooler at the dessert area sliced vegetable temperature at 2C
- All freezers temperature at -18C or below
**Recommend to maintain a temperature log for all refrigerating units

General:
- Staff on-site has valid FoodSafe certificate until 2027.
- Permit is posted in plain view to public
