Observation (CORRECTED DURING INSPECTION): 1. Natural disinfectant product was used in kitchen facility. Staff could not verify what product it was. Product may be 'oil of thymol'.
- Staff made chlorine sanitizer solution during time of inspection, concentration at 100- 200ppm
Corrective Action(s): - Facility, staff and operator can only use disinfectant/ sanitizer that can be TESTED to verify adequate concentration.
- Continue to use chlorine sanitizer or QUAT solutions unless documentation can be provided that product can be tested for sanitizing qualities and that it is HEALTH CANADA approved.

- All handwashing stations equipped with hot/cold running water, liquid soap and paper towels
- Temperatures meet health requirements:
* Meat walk-in cooler at 1C
* Veg walk- in cooler at 3C
* Walk in freezer at -18C
* All undercounter coolers at 4C or below
- Ice machine maintained in sanitary condition
- Low temperature dishwasher available, final rinse for chlorine residual at 50ppm
- Pest Control Program in place, continue to follow Pest Control Operator recommendations
