Observation: There were missing light covers above the dishwashing area as well as the frying area.
Containers of frying oil were found stored in the staff washroom.
Corrective Action(s): Replace missing light covers and some light bulbs may require replacing to increase lighting in the dishwashing area. Find a storage area for all the frying oil in the dry storage area. Do not store any food or food-related items in the staff washroom.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There are areas in the kitchen that requiress attention when cleaning. There were debris build up on top of the dishwashing machine as well as parts of the kitchen ceiling tiles and light cover have dust and grime. Floor requires thoroug sweeping and mopping.
Corrective Action(s): Deep cleaning required in the kitchen area to include the above mentioned items.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Flooring in the kitchen area has broken tiles and a large gap between the tiles where food debris is building up.
Corrective Action(s): Repair broken tiles and provide a grout or seal between the tiles to prevent debris from building up. Broken tile and gaps will contribute to difficulty in cleaning floor and not maintaing it in sanitary condition as well as tripping hazard for employees.

Health permit was posted.
Hand wash stations were provided with liquid soap and paper towels.
Sanitizer (quats) measured 200 ppm.
Walk-in cooler was at 4-6 deg C. Walk-in cooler was below -18 deg C.
Prep line coolers were at or below 4 deg C.
Hot holding for sausages/bacon, gravy, hollaindaise was at or above 60 deg C.
Temperature log available and up to date.
Low temp dishwasher had chlorine residual of 100 ppm.
Kitchen assistant manager has valid Food Safe 1. Kitchen manager needs to renew her Food Safe 1 certification.
No signs of pests noted at time of inspection. Pest control monitoring in place.
Dining area and washrooms were in sanitary condition.
