Observation: Only 3 or 4 mouse droppings noted in grain storage room. Grain storage room has been sealed with wire mesh. Doors have door swipes installed for pest control. Several pest monitoring traps were checked and all were empty. Report from licenced pest control was reviewed with operator.
Corrective Action(s): Clean up all food and clean floor. Continue with licenced pest control and continue with cleaning.

Comments

Food Safe: Operator on site has Food Safe Level 1 (about 3 years old) and staff have as well.
Operator advises certificates are all < 5 years old. Check dates and take Refresher course before expiry date in order to renew.
Food Safety Plan and Sanitation Plan are on site.
Hand washing sink has hot/cold water, liquid soap and paper towels in dispensers.
Coolers are all at 4 C/ 40 F or colder (3 coolers as well as large beer walk in cooler).
Hot holding - chili temperature is above 60 C / 140 F.
Frozen food is defrosted at 4 C in cooler. Food is reheated to 74 C / 165 F or hotter before hot holding.
Reviewed corrective actions with the operator and staff.
StarSan sanitizer - follow directions on the label. Reviewed label regarding use and dilution.
Both commercial dishwashers have a chlorine final sanitizing rinse (50ppm + detected using test strip).
Licenced pest control report from Jan 29/20 reviewed. - see above.
Beer brewing area has hot/cold water at sinks.
Staff washroom sink has hot/cold water, liquid soap, and paper towels.
