Ensure staff have been trained on how to properly clean and sanitize the slicer after use. Use a flashlight to check to work. Use bottle brushes to access the hard to reach areas on the slicer

Overhead pizza cooler has been repaired
***Recommend purchasing several metal inserts to store the Potentially hazardous food items stored in the overhead pizza cooler as discussed.
Old mouse droppings cleaned. No visible signs of new droppings. Recent pest control operator report stated no activity observed.
Always keep patio doors closed at all times when in operation to prevent pest entry
Quat dispensing container now in place in the kitchen to dispense quat into the sanitizer bucket. Ensure wiping cloths are kept in the container fully submerged after use and the solution is changed every 1.5 hours or more frequently depending on the organic load introduced.
