-Dishwasher rinse cavity measure 71C
-Ensure cold potentially hazardous foods are maintained at 4C or below. Some of the packaged foods like the cut carrots, canteloupe in plastic packages, watermelon, sour cabbage were measuring 8-10C on the surface. An internal probe of the cut canteloupe measured 4C or less.
