Observation (CORRECTED DURING INSPECTION): Front area sandwich cooler at 9 degrees C (ambient). Internal food temperature measured 8 to 11 degrees C.
Corrective Action(s): The following potentially hazardous food was discarded by staff: Three and a half medium food inserts of cooked chicken pieces. Other potentially hazardous food items in lower compartment (small quantity of pasteurized cheese, packaged pepperoni) transferred to walk-in cooler. Only a small quantity of pizza dough to be stored in sandwich cooler (to be used within two hours); remainder to be stored in walk-in cooler. Only small quantities of potentially hazardous food to be stored in upper food inserts (to be used within two hours).

Observation (CORRECTED DURING INSPECTION): Food debris observed on the following equipment, which was last used the day before:
1. Standing dough mixer bowl and mixing attachment.
2. Food processor.
2. Vegetable chopper.
Corrective Action(s): Items relocated to three-compartment sink to be properly washed, rinsed, then sanitized. Ensure food equipment and utensils are properly washed, rinsed, and sanitized. Allow to air dry before storing in clean equipment and utensil storage areas.

Observation (CORRECTED DURING INSPECTION): 1. Washroom hand washing station lacked paper towels.
2. Front area hand washing station was covered with a large lid (temporarily) during inspection.
Corrective Action(s): Corrected. Ensure that at all times, all hand washing stations are accessible (do not store any items that block access or use of the sinks) and are supplied with hot and cold running water, liquid soap, and paper towels to facilitate proper hand washing.

Observation (CORRECTED DURING INSPECTION): 1. Open can of crushed tomatoes observed in kitchen sandwich cooler. Note: It was stated that can was opened this morning.
2. Raw shell eggs observed to be stored above ready-to-eat foods (chutney). Note: No leaks observed. Chutney is packaged/covered.
3. Large container of chutney observed to be uncovered.
Corrective Action(s): Corrected. Ensure food is protected from potential contamination at all times. Do not store food in original cans when opened; transfer to an appropriate food grade container and cover. Ensure all foods are properly covered. Do not store raw animal products above ready-to-eat foods as raw foods may potentially leak onto foods below.

2. Sanitizer spray bottle unlabeled.
Corrective Action(s): Comet cleaner relocated away from food. Ensure cleaning chemicals and similar products are not stored near food. Ensure all cleaning / sanitizing chemicals and similar products are properly labeled to identify contents to prevent accidental contamination of food / food contact surfaces. Note: Spray bottle to be replaced as nozzle has poor function. Date to be corrected by: Today.

Upright freezer at -16 degrees C.
No hot holding at time of inspection.
Front area and kitchen hand washing stations are supplied with hot and cold running water, liquid soap, and paper towels.
Bleach water sanitizer available at 200 ppm in spray bottle and in two containers. Wiping cloths stored in bleach water sanitizer.
Hot and cold running water available at three-compartment sink. Sanitizing compartment was set up with a 100 ppm chlorine bleach sanitizer solution at time of inspection.
Ventilation canopy in clean condition.
No signs of pest activity observed at time of inspection. Fitted screen door in place at back door.
FOODSAFE requirements met at time of inspection. Certificate valid until January 21, 2028.
Permit posted at front.
