Observation (CORRECTED DURING INSPECTION):
Food inserts of raw cut garlic, cut jalapenos, and deep fried garlic gloves being stored at room temperature. This is dangerous as bacteria will grow at room temperature and may cause customers to become ill.
Corrective Action(s):
Immediately place these food items in the fridge (<4C), and store in the fridge at all times to prevent bacteria from growing. During the inspection, staff placed the food items in a cooler (2C).

Observation:
Grease and food debris found on the floor beneath and around the deep fryers; in the drawers under the flat grills; and on the floor beneath the hand sink in the front cooking station. The grease and food debris will attract pests and is a fire hazard.
Corrective Action(s):
Wash and clean the mentioned areas to remove the food debris and grease. Ensure these areas are cleaned everyday to prevent the accumulation of grease and food debris.

Observation:
The sink, in the front cooking area, has no running hot water exiting the faucet and the faucet constantly has cold water running. Staff are unable to wash their hands correctly, and the constant water will attract and harbor pests.
Corrective Action(s):
Immediately fix the faucet so there is running hot and cold water that exits the faucet, and the taps can fully turn the hot and cold water fully off and on.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -19C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had [Cl2] between 50-100ppm.
- No bleach sanitizer in spray bottles or cloth buckets found.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and all foods stored 6" off the floor on shelves or platforms.
- Storage areas are clean and organized.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good, improvement needed in the mentioned areas.
- No signs of pests.
- Exhaust canopies were last serviced in September 2023, next service due in March 2024 as per sticker.
- FoodSafe certified staff present, or those that possess an equivalent (recognized) course.
- Valid health permit and decal present.

ACTION:
- Make a bleach sanitizer in spray bottles and cloth buckets by mixing 1Tsp bleach to 1L of hot water, so the [Cl2] is 100ppm-200ppm. During the inspection, staff were shown how to mix it up.
- Fix the front sink, in the cooking area, so running hot and water exits the faucet and can be fully turned on and off.
