Observation (CORRECTED DURING INSPECTION): Sausage cheese bread stored at room temperature at front display
Corrective Action(s): This is a PFH item and needed to be stored at <4C to prevent bacteria growth. Store sausage bread in cooler until served or ensure to display amount that can be sold with in 2hrs from the time it came out of the oven at room temp.Discard any after 2hrs.

Observation (CORRECTED DURING INSPECTION): Spoons used to scoop out ingredients from prep cooler inserts at store front found directly touching the ingredients.Staff indicated spoons only washed at the end of the day
Corrective Action(s): Store spoons in a separate bucket inside cooler so they are not directly touching the ingredients. Wash and sanitize spoons every 2-4hrs to maintain sanitary condition

Observation: Rodent droppings found at back break slicing area and under cabinet of coffee machine at front of store
Corrective Action(s): Thoroughly clean and sanitize the areas (use bleach solution). Ensure you're conducting daily cleaning, paying more attention. Have regular pest control services and ensure to follow instructions an recommendation of pest control company. Monitor situation.

Observation: 1) Bread crumbs found accumulation at the box/bags storage areas beside bread slicing station
2) 2 back receiving doors had gaps between the door at the floor, light was coming through.
Corrective Action(s): 1)Thoroughly clean and sanitize the areas mentioned above. Ensure to reach in/under hood to reach areas when conducting daily cleaning
2)Fix the seal/replace seal so gaps present to prevent potential pest entry.

Observation: Bare wood used for storing breads (same wood racks in the fermentation cooler/wooden trays used to display croissant at front display)

Observation: 1) Tab at the front sink is dripping water from the knob
2) Front service area storage shelf has some missing pieces of wood on some drawers (Take out containers and cups stored inside) Surface of the storage shelf appeared old and hard to clean
Corrective Action(s): 1) Fix the tab so its not leaking, monitor and wipe down water so it doesn't get onto food
2) Fix and repaint the surface of the drawers and shelf so it can be cleaned easily and avoid broken pieces of wood get into food containers (or seal/clean)

Routine inspection conducted, facility has a manufacturing area at retail and seating area
Hand sinks adequately stocked with supplies. (Ensure hand sinks at the back can dispense hot and cold water/warm water)
Sanitizer available as spray bottles through out the working stations in the premises, tested at 200 ppm quats, (F29) (Change wiping cloths every 2-4 hrs throughout the day)
All coolers <4C, All freezers <-18C, FIFO followed, hot holding at 63C
All food stored above ground, non-food items stored on pallets off ground, foods from approval sources
General sanitation is good. *Ensure to clean fan covers everyday.
*Oil dripping from ceiling duct beside rack, dishwasher, ensure no food stored below, and fix situation
- High temp dishwasher for store front achieved 77.2 at plate level
*High temp rack washer needs to restart to heat up. Check next inspection.
- Facility has a contracted pest control, service ½ week
*Ensure to change gloves after each task, wash towels before changing to new gloves
