Observation (CORRECTED DURING INSPECTION): Cloths used for cleaning food contact surfaces must be dispensed in sanitizer when not being used.
Corrective Action(s): Dispense all cloths not being used in sanitizer solution so that any bacteria found on the cloths can be destroyed and not spread on food contact surfaces when using those cloths to clean.

Observation: The ice machine has visible mold growth.
Corrective Action(s): Empty the ice machine, clean the mold and then sanitize the interior of the ice machine with 100 to 200 ppm chlorine (bleach).

Observation: The dishwasher piping is leaking when the dishwasher is in use.
Corrective Action(s): The dishwasher is still adequately dispensing sanitizer but the leaking may cause the dishwasher to malfunction and may also cause an abundance of water in the back of the kitchen. Call a technician to fix the faulty piping.
