Observation (CORRECTED DURING INSPECTION): A surface sanitizer spray bottle by the beverage machine had 0 ppm QUATS concentration at the time of inspection.

Corrective action: Discard the content in spray bottle. Refill the bottle with QUATS solution. Use test strips to verify that the QUATS concentration is at 200 ppm to achieve adequate food contact surface disinfection. Proper surface disinfection ensures pathogen loads on food contact surfaces are kept at minimum.

Observation (CORRECTED DURING INSPECTION): High temperature dishwasher achieved a temperature of 69.0C at the plate level after the final rinse cycle.

Corrective action: Kitchen staff refilled the water tank of the dishwasher with fresh hot water. The dishwasher was measured at a temperature of 75.0C at the plate level after the final rinse cycle. Proper dishwashing procedures (ie. achieving a minimum of 71.0C at the plate level after final rinse cycle) is important to kill pathogens on food contact surfaces.

Observation (CORRECTED DURING INSPECTION): A surface sanitizer spray bottle by the beverage machine was not labelled.

Corrective action: Label the surface sanitizer spray bottle with the common name of the surface disinfectant to ensure kitchen staffs are aware of the contact in the spray bottle and prevent any chances of misuse.

General comments:
-Handwashing station is equipped with hot/cold running water, liquid soap, and single-use paper towel.
-All coolers are at or below 4C
-All freezers are at -18C or below
-All refrigeration units have a thermometer; the units are well organized; foods are all covered properly.
-Cooked chicken meats are at 74.0C or above
-All hot holding units are at 60C or above
-Ice machine by the beverage machine is clean
-Dry storage room is clean and organized
-All food is stored off the ground.
-General sanitation is clean
-No signs of pest activities at the time of inspection.
-Staff washroom is equipped hot/cold running water, liquid soap, and single-use paper towels
-Kitchen staff in charge has Foodsafe Level one certificate
-Operating permit is posted on the wall by the front desk area.
