Observation (CORRECTED DURING INSPECTION): Ice cream/cream bags on pallets are thawed overnight in Produce area at room temperature.
Surface temperature between 7-10C.
Corrective Action(s): Discard any bags that have been over 4C for more than 2hrs.
Monitor thawing at all times.
Thaw in coolers ahead of time.

Operator moved the pallets and followed food safety plan in place for corrective actions.

Comments

Inspection during Production Hours.
Kitchen supplies cakes, bakery items, soups, confectionaries, frozen goods and fresh items for sale and distribution to other kiosks and retail in the rest of the facility.
Hand wash station at the front of the kitchen fully supplied with liquid soap and paper towels in dispensers.
Bleach sanitizer 100ppm Chlorine.
Dishwasher >71C (71.3C) max rinse temperature.
Prep tables are in good repair and clean condition.
Bakery ingredients are covered and protected from contamination.
Designated scoops are available for ingredients. Some scoops stored inside bins but handles are not inside the food.
Containers for use are protected from contamination.
Staff appear to have clean aprons during production; staff wear hair nets and handle food items with utensils.

Bottles for sauces and sirups are stored in crates in the back dry storage area.
-Most bottles stored upside down and appear to be sanitized or sealed; some bottles are stored right side up and appear to have been handled.
-Reminder that bottles that are unsealed and not stored in original packaging will require a cleaning/sanitation step before they are used for filling.

Most of the dry storage area is kept organized; inventory is grouped together based on type.
Some reorganizing may be needed; sweeping out behind racks is needed (many dropped caps).

No signs of crawling or flying pests at the time of inspection.
Keep up the maintenance and cleaning behind hard to reach areas and equipment.
