Observation: 1) Dishwasher not reaching 71C during rinse (sanitize) cycle. Temperature was consistently reaching 67-68C on numerous runs.
2) Quat sanitizer dispenser (pink) not dispensing 200ppm sanitizer when set up properly at the 2 compartment dish sink
Corrective Action(s): 1) Adjust hot water source/ repair machine to ensure 71C minimum is reached on rinse cycle. The digital display appears to give accurate readings. Until the machine is repaired, you must manually sanitize your dishes using 100ppm bleach in your 2 compartment sink (after first washing then rinsing)
2) Do not use this sanitizer dispenser. If you wish to use this unit, you must have test strips to ensure 200ppm of sanitizer is getting dispensed.

Hand sinks supplied with liquid soap, paper towels, hot/cold running water
Storage room well maintained - please keep back door closed due to cottonwood "fluff" collecting under the shelves.
Dishwasher wash cycle is OK, see above for notes on sanitizing cycle
**Temperature logs must include rinse temp for dishwasher daily
Bleach on site for use as a surface sanitizer. Please use this product for all kitchen surface wipe down, and sanitizing of the tables out front.
Note: the purple cleaner/ disinfectant in the spray bottle up front didn't have quat or chlorine sanitizer in it. Please ensure all spray bottles are accurately labeled and that a sanitizer is used for table wipe down.
