2.) Spicy mayo stored in squeeze bottle at room temperature.
Corrective Action(s): Discard the food items noted above. Raw eggs and spicy mayo must be stored inside the cooler at < or = 4C at all times.

Comments

- General sanitation needs improvement.
- Main handwashing station supplied with hot/cold running water, soap, paper towels.
- Three compartment sink available for manual dishwashing. Sanitizer available at 100ppm chlorine bleach concentration.
- Surface sanitizer available in spray bottles at 100ppm chlorine bleach concentration.
- Dry storage area has adequate space and wire racks.
- Downstairs storage locker needs better organization. Do not store any open bags of dry foods (ie flour) in the storage locker. All foods must be dry and sealed to prevent any pest activity. Store the open bag of flour inside the kitchen.
- No signs of pest activity.
- FOODSAFE level 1 equivalent trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers (undercounter, prep) at < or = 4C. Do not overstock the undercounter cooler at the front. Too must food storage may prevent adequate cool air circulation.
- Chest freezer = -20C.
- Chest freezer (downstairs storage locker) = -18C.
- Rice warmer = 60C
- Thermometers available in all refrigeration units.
- Daily temperature log is available and kept up to date.
