302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Front drink making area did not have any paper towel. Spray bottle in the back had 100ppm chlorine sanitizer solution but noted that staff were using reusable cloth towels.
Corrective Action(s): Ensure sanitizer is readily available in the front service area and that if reusable cloth towels are used to wipe food contact surfaces, that they are stored in a container of sanitizer solution to prevent microbial growth. Otherwise, use single use paper towel to wipe sanitizer on food contact surfaces.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): None of the staff hand wash stations had paper towel at time of inspection (front drink area, kitchen food prep area, staff washroom. Operator did not have the right type of paper towel to fit in all dispenser but was able to place a roll at each hand sink. No concerns with soap, hot and cold running water (available).
Corrective Action(s): Immediately obtain proper paper towel and place in holder/dispenser at each hand sink.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Noted bag of onions on the ground and several foods in the walk in cooler uncovered. Also noted staff washroom door opens into the food preparation area and is not self closing.
Corrective Action(s): Keep all foods stored off the ground and all stored foods covered. Also, install self closing hinges/device on staff washroom door.

Observation: Back door was open at time of inspection.
Corrective Action(s): Keep back door to premises closed or obtain/install a screen to prevent the entry of pests.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Noted a food prep sink installed beside the cookline. No concerns with this addition or location, however no floor plans were submitted. Also noted missing ceiling tiles above the back door and walk in cooler.
Corrective Action(s): Submit updated floor plans and obtain permits from the building/plumbing department at the City of Burnaby. Also, replace missing ceiling tile.

Comments

- All coolers 4C or less (walk in cooler, pop cooler, prep cooler)
- Both chest freezers less than -18C
- All hot holding 60C or higher (broth and rice)
- Lights in food preparation areas had covers/sleeves.
- Meat slicer appeared clean at time of inspection and was stored in the back storage area. Operator said it is not used for the business and is looking to sell it. Remove meat slicer from the premises.
- Ice machine appeared clean with the scoop for the ice stored outside of the ice in a separate container.
- General sanitation satisfactory. No obvious signs of pest activity noted at time of inspection.
- Old high temperature dishwasher has been replaced with a new low temperature one. Operator to update sanitation plan accordingly.
- Low temperature dishwasher had 50ppm chlorine sanitizer. Test strips available to verify concentration of sanitizer solution.
- Fetal alcohol signage provided x2. Post one in each public washroom.
- Reminded operator of foodsafe level 1 recertification requirements. Information pamphlet provided.
