Observation:
The high temperature dishwasher rinse cycle was 155.8F at the plate's surfaces as per the max/min thermometer. The temperature must be at least 160F at the plate's surface to properly sanitize items. Items will be sanitized using chemical means until the dishwasher is working correctly.
Corrective Action(s):
Immediately call a company to repair and maintenance the dishwasher, so it is running as per the manufacture's specifications (temperature and pressure). The rinse cycle temperature shall be 160F at the plate's surface, and the pressure shall be 20-25 PSI during the rinse cycle.
Sanitize items using chemical means until the dishwasher is fixed.

Comments

A routine inspection was conducted, the following observations were made:
- Cold storage room was 3C; thermometer present; and temperature recorded daily (manually & electronically).
- Alcohol and hydrogen peroxide based sanitizers used on food contact surfaces, and Quats sanitizer used on the floor.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good.
- No signs of pests. Reviewed pest reports. All in order.
- All foods stored 6" off the floor on pallets, racks or platforms.
- All foods stored in food grade containers; covered; labeled; and dated coded.
- No expired food in use. FIFO rules being followed.
- HACCP system in place.
