Observation:
- Dead fruit flies observed inside the ice machine.
Corrective Action(s):
- Turn the ice machine off. Empty all ice out. Clean & sanitize the interior.

Observation (CORRECTED DURING INSPECTION):
- House made pudding topping was being cooled in room temperature for over 2 hours as per the staff. Pudding probed at 26C. No time tracking observed.
Corrective Action(s):
- Ensure proper cooling procedure is followed. It should reach 60C to 20C or below within 2 hours and 20C to 4C or below within 4 hours. There should be record of the time it started cooling for time tracking. Product discarded.

Observation:
- Excessive number of dead fruit flies observed in the following equipment: Ice machine, slide door cooler, prep cooler.

- Clean and sanitize all equipment noted above.

Observation (CORRECTED DURING INSPECTION):
- No sanitizer in use during the operational hours. Staff stated that the sanitizer is made when the store is closed.
Corrective Action(s):
- Food contact surfaces and general surfaces should be properly sanitized throughout the operational hours. Staff made bleach sanitizer at the time of inspection; it was measured at 200ppm.

Observation:
Presence of live & dead fruit flies are severe in the facility. They are found everywhere including inside/ on food equipment, sinks, in the air where the food prep is occurring.
Corrective Action(s):
Deep cleaning of the facility is required. Remove all the traps soiled with dead fruit flies. Clean off the fly light trap. Treat all drains. Ensure there is no residue of food and water.

Observation:
- Overall sanitation not maintained. Stains and debris build up observed throughout the kitchen surfaces, walls & on the floor. Mop sink is heavily soiled. Dead fruit flies observed throughout the premises.

- Facilitate deep cleaning of the facility.

REPEAT VIOLATION: The only staff who was present at the time of inspection has no valid foodsafe level 1 training.
