Observation: Ice machine has some slime build up inside. This equipment is scheduled for cleaning/sanitizing once a month.
Corrective Action(s): Empty ice machine and clean and sanitize thoroughly. Increase frequency of cleaning.

Observation: Hand wash station was blocked with a hobart mixer and the tap for the cold was broken.
Corrective Action(s): Ensure this hand sink is in good working order. Hobart mixer was moved so that hand sink can be easily accessible.

Observation: Health permit not posted in plain public view.

Observation: Missing light cover in the dry storage area beside the oyster station.
Some food items in the walk-in cooler were left uncovered.
Corrective Action(s): Re-install light cover over the dry storage area.
Keep all food items covered in the walk-in cooler. Provide a covering for the rolling rack.

Observation: Sanitizer bottles in the kitchen area were not labelled.
Corrective Action(s): Ensure all sanitizer bottles or any other chemical containers are labelled properly.

Comments

Hand sinks supplied with liquid soap and paper towels.
Sanitizer (quats) measured 200 ppm.
Bleach (used for oyster shucking area only) was at >100 ppm.
Walk-in freezer was at -15 to -16 deg C.
Walk-in cooler was at 2-4 deg C.
Prep line coolers were at or below 4 deg C. Except for prep line cooler #1 - temperature was at 6-8 deg C.
Line freezer was at -5 deg C (some fries stored in this freezer).
Hot holding for soup/gravy was above 60 deg C.
Temperature log was available and up to date. Some dates were missing (especially weekends) in previous weeks.
Low temperature dishwasher had chlorine residual of 100 ppm. Test strips available.
Staff hygiene - clean uniforms/aprons as well as hair restraint.
Staff washrooms provided with sanitary facilities.
Active pest control in place. Provide report for follow-up inspection.
Bar area - hand sink adequately maintained
Cooler was at 4 deg C.
Sanitizer was 200 ppm Quats
Test strip available
Patrons' washrooms were in sanitary condition.
Items that require addressing:
1. Service line cooler #1 - water pooling on the bottom of the cooler and need to adjust temperature lower
2. Clean hard to reach areas - underneath shelving near the linen area, behind cooking area (grease and some food debris)
3. Clean and power wash the garbage disposal area
