301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Dirty pizza cutters were stored in individual boxes for re-use in the food preparation area. Operator informed that the cutters are washed once a day and they have different ones for different types of pizzas.
Corrective Action(s): The cutters were removed from the food preparation area and were taken to the back for washing. Used pizza cutters contain food debris which can harbour pathogen growth. This can lead to foodborne illness through cross-contamination. Ensure pizza cutters, similar to other food contact surfaces, are either a) washed and sanitized after each use b) stored in an ice bath c) stored in water at 60C or higher d) time stamped and replaced every 2 hours. Repeat violations will lead to further enforcement.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) There was no sanitizer available in the food preparation area.
2) QUATS sanitizer in the back of the facility was at 150 ppm.
Corrective Action(s): 1) Operator moved a spray bottle of sanitizer to the food preparation area at the time of inspection.
2) Operator refilled the bottles with fresh QUATS solution from the dispenser. All food contact surfaces were sanitized again.Test strips were available on site. Ensure the sanitizer is maintained at 200 ppm QUATS at all times of operation.

Observation (CORRECTED DURING INSPECTION): Handwashing sink near the dishwashing area was blocked off with delivery containers.
Corrective Action(s): Operator moved the boxes at the time of inspection. Ensure hand washing sinks are always accessible to promote handwashing through all hours of operation.

Routine inspection conducted.

Temperatures:
- Walk-in cooler: 3C
- Pizza preparation cooler: top: 4C, bottom: -1C
- Both units have accurate thermometers.

Sanitation:
- Handwashing sinks adequately equipped with hot/cold running water, liquid soap, and disposable paper towels. Ensure hand sinks are always accessible *see violation above*
- 3-compartment sink was equipped with plugs.
- Sanitizer bottles were labelled. Ensure QUATS sanitizer is maintained at 200 ppm. *see violation above*
- Test strips for checking sanitizer concentration were available on site.
All food contact surfaces should be washed and sanitized after each use or every 2 hours if continuously used.

Storage:
- Items are labelled with dates in the cooler.
- Meats are stored separately from produce and chopped vegetable toppings.
- Dough is cooled in containers kept on rolling racks.
- Food is stored off the floor.
- Scoop for flour was stored outside the container in a sanitary manner.

Pest Control:
- Facility had been thoroughly cleaned. No mice droppings seen at the time of inspection.
- Entry points had been sealed.
- Regular monitoring is being managed by a professional pest control company.

Administration:
- Valid FoodSafe level 1 certifications were available on site for the owner and staff.
- Temperature logs were up to date.
- Pest control inspection reports were available on site.

COVID-19 Safety:
- Masks are mandatory.
- Maximum occupancy was posted.
- COVID-19 screening questions were posted outside the facility.
- Dine-in seating had been removed. Two chairs were kept on opposite ends of the dining area for seniors waiting for their order.
