Observation: Temperature of the rice inside the warmer was luke warm (65F- 112F) and inside another pot left on the counter was 130F.
Correction: Ensure rice is kept hot at 140F or above or store inside the fridge. When reheating from cold, ensure that it reaches 165F. Use your thermometer to check.
Comments

Clean the stainless steel cart and the outside surfaces of the sinks in the kitchen. Include these in the daily maintenance.
General sanitation is satisfactory.
Temperature of equipment are satisfactory. Temperature log is maintained.
Donair cooking procedures are satisfactory. All burners are on and the meat cones are turning. Sliced meats are cooked again on the grill before storing in the steam table unit.
