Observation (CORRECTED DURING INSPECTION): Hot holding unit noted at 52 C with cooked meat.
Corrective Action(s): Ensure PHFs are stored at or above 60 C. Operator mentioned the water levels was low and had to be topped up and was in the process of being heated. New staff person did not top up the unit at the regular time.
Ensure all staff are made aware of the regular water level re-fill times and managers routinely check the work of their staff.

Observation: Flour batter with metal strainer in a plastic container on top of a cart rolled out of the back door into the service hall beside the unit.
Corrective Action(s): Ensure all food and supplies for unit are stored in the unit. If something must be temporarily rolled/moved outside of the unit/into the service hall then it must be protected from contamination. Cover, protect - food and equipment.

-No signs of pest activity noted during inspection
