Observation (CORRECTED DURING INSPECTION):
Many processed foods stored at room temp.
1) Cooked meat stored in metal bowl has double stacked on prep cooler. Temp probed found to be 13 deg.C
2) Bean sprouts sitting in water, probe temp 21 deg.C
3) Cut vegetables sitting in basket on back counter, probe 23 deg.C
4) Tub of margerine sitting on cart
5) Bottle of condensed milk on upper shelf.
Corrective Action: Food discarded. Keep processed food in coolers and < and/or = 4 deg.C
Food between 4 - 60 deg.C encourages growth of pathogens

Observations: tapioca pearls left at room temp for 2.5 hours
Corrective Actions: Keep pearls < and/or = 4 deg.C, or timestamp each batch of pearls and discard after 2hours.
Food at room temperatures may encourage pathogen growth

2) Food must be stored covered in containers to prevent contamination
3) Cut vegetables must be stored in cooler and away from areas where they may be contaminated ie soap

Corrective Action: Food moved to other coolers. Have cooler serviced to ensure it is < and/or = 4 deg.C
Observation: 2 sliding door cooler handle is broken. Currently being held on by string.
Corrective Action: Fix door handle. String may absorb moisture and harbor pathogens. Surfaces should be smooth, impervious, and durable.
