A routine inspection was completed:
- Coolers 4C or colder; freezers -20C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in cloth buckets, spray bottles, and in 3-comp sink had 200ppm strength. Test strips present.
- Low temperature dishwasher has [Cl2] of 100ppm during the rinse cycle. Test strips present. **RECOMMEND: decrease [Cl2] to 50ppm to avoid high chlorine residue left on food contact items***
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- FoodSafe certified staff present.
- The exhaust canopies next professional cleaning and service due in this month (January 2024). Ensure to schedule and complete this by the end of this month.
- The main sandwich assembly cooler was not working (temperature was 18C). All perishable food items are being stored in different working coolers. Food inserts are being stored on ice and less amounts of food are being stored in each insert to facility higher turn-over rates to keep food at 4C or colder. A maintenance person is arriving today to repair the cooler.
