Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Main island prep cooler was at 4C.
-Both under counter coolers were at or less than 4C.
-Dairy display cooler was at 2C.
-Both dairy dispensers were at 4C.
-Hot holding was greater than 60C. Items are cooked to greater than 74C prior to placing into the hot holding units.
-Temperatures are checked and recorded throughout the day. Records indicate when critical limits have been exceeded.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum of 71C required for proper sanitizing).
-Quats sanitizer pails tested at 200ppm and changed every 2 hours. Sanitizer pails are labelled with time stamps.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Iced beverage attachment disinfected with a 200ppm Quats sanitizing solution.
-General food storage practices good at the time of inspection. Foods properly stored off the floor and covered.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator on a monthly basis. No signs of pests noted at the time of inspection. During months of higher fly activity, fly strips can be used in the facility, as long as the fly strips are not located above any food preparation areas/contact surfaces, food storage area, or food equipment/utensil storage areas.
-Washroom clean and well maintained.
-FoodSafe Equivalent valid (Advanced FST 3rd Edition) May 26 2020.
