Observation (CORRECTED DURING INSPECTION): 1. Raw fish stored above ready-to-eat foods.
2. Leftover canned food left in can.
3. Cell phone stored on cutting board.
4. Bowls for scooping stored directly in food.
Corrective Action(s): 1. Ensure all raw animal products (eggs, fish, meat and chicken) are stored underneath ready to eat foods (foods that do not require cooking).
2. Always transfer leftover canned food into food grade containers.
3. Do not store personal belongings on food contact surfaces. Sanitize cutting board before using.
4. Do not store bowls in food. Use utensils that prevent contamination of food.

Observation: Dishwasher leaking and pooling water and will not be used until it is repaired.
Staff stated dishwasher started leaking one day ago and the owner has been notified.
Corrective Action(s): Repair leak/dishwasher immediately.
In the interim, use the manual method of dishwashing as discussed (wash and rinse in one sink compartment and sanitize in second compartment). Sanitizer solution must be made as per manufacturer's instructions. Use test strips to verify strength. Please note this is only a temporary alternative to using the dishwasher.
Delays in repair may result in premises needing to use only single-use utensils only.
Provide an update on the dishwasher by end of day Thusday, December 7, 2023.

Hand sink equipped with hot/cold running water, liquid soap and single-use towels.
Coolers at or below 4 C.
Freezers at or below -18 C.
Sambar reheated to at least 74 C.
Ensure when hot holding foods on the stove, foods remains above 60 C after being reheated to 74 C.
Dishwasher - see above. Please ensure manual method of dishwashing is followed. Manual method of dishwashing was not set up at the time of inspection as facility had just opened.
Sanitizer spray bottles - quats registered at 400 ppm. Staff were instructed to dilute solution to 200 ppm as per the instructions on the bottle.
General sanitation satisfactory.
