Routine inspection:
Well-maintained kitchen.
Sanitation- good. Coolers are at 4 C - good.
Hand washing station has liquid soap and paper towels.
Commercial dishwasher has a hot water sanitizing rinse (82 C / 180 F at gauge and 71 C inside).
***Note: Use only food containers that are suitable for warm /hot food when storing cooked soups.

Specific comments: 1) Do not use the Parkay margarine (25% transfat of total fat)

2) Idahoan "au gratin" potato mix - contains cheese/milk and hydrogenated oil (0.4 grams transfat in 1.5 grams total fat = 26.6 %). Some of the transfat is from dairy source however some is from hydrogenated oils and does not meet the restriction of 5% or less. Discarded this product during inspection.
Food exempt from the regulation includes:
  • Pre-packaged food with a Nutrition Facts table sold directly to the consumer without alteration
  • Food with the sole source(s) as naturally occurring trans fat (i.e. beef, sheep, lamb, bison and dairy products)
  • Employee lunches not purchased from the food service establishment
