Observation (CORRECTED DURING INSPECTION): Sauces for fried chicken wings observed to be at room temperature (19.9°C). Product was in crock pot / warmer, but device was not powered. Staff stated sauces were portioned out at ~8am and discarded by 10pm. Upon investigation, original container for sauces state "Keep Refrigerated".

**Corrected during inspection** Product discarded when identified. Sauces are to be either
a) heated to 74°C and kept at 60°C with the warmer, or
b) kept refrigerated in undercounter coolers.

Should this product have a dispensed shelf life of 24 hours or greater that is confirmed by a certified food lab, please let your district inspector know and provide the test results.

Observation (CORRECTED DURING INSPECTION): Sanitizer available at food preparation area measured >400ppm (maxed out test strip).
**Corrected during inspection** Dispenser at 3 compartment sink measured ~200ppm fresh from dispenser. Staff emptied spray bottle and refilled when identified.

Double check sanitizer concentration with test strips to ensure spray bottle has proper concentration of sanitizer. Please train all staff on how to properly use dispenser and test solution.
