Observation: Staff personal items found to be in food preparation and equipment storage areas:
- open containers of Coffee/tea on food preparation surfaces observed during inspection
- cigarette package on shelf in food preparation area

Find suitable location for beverages that is not directly on food preparation surfaces (i.e. counters, work surfaces)

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed on lower brown rolling rack in server area and corners of dry storage area. Pest Technician observed to be on site during inspection.

Corrective Action(s): Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Inspect facility for points of entry for pests. Seal any holes.
Follow recommendations advised by Pest Control Company Technician.
NOTE: have Pest Technician inspect all door sweeps on doors to kitchen to ensure they are tight fitting.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Facility has older cooler that is leaking water in bottom of unit. This cooler has been recently serviced. Cooler may require repair or even replacement. This cooler unit is integral to operation of kitchen therefore a plan for its eventual replacement needs to be considered.

- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 50 ppm Chlorine at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Test strips available for use
- Ice machine and scoops in good sanitary condition
- Raw meat stored away from Ready to Eat food items - proper storage in cooler units
- First In First out and date stamping methods observed in use
- All food items covered in cooler and freezer units
- Hair restraints in use
- Stairwell door closed during inspection
- Pest proof containers for all dry storage items - new additional storage containers obtained
- Cooler handles and seals in good sanitary condition
- Meat slicer in good sanitary condition
- All containers used to store lids/utensils/etc. in good sanitary condition
- FoodSafe Certified staff present during inspection

NOTE: Improvements in rodent infestation observed today. Minimal droppings. However, with colder weather rodents are more likely to try to enter into facility again. Ensure barriers are put in place to prevent entry. Recommendation to have all exterior doors and interior doors of kitchen inspected to ensure doors are tight fitting and weather stripping or door sweeps have not worn.

NOTE: General sanitation of facility has much improved since previous inspection. Continue to maintain this high level of sanitation.
