Observation: Upright ferezer had cardboard lining the shelving unit.
Corrective Action(s): Discontinue the practice of lining shelving units with cardboard. Cardboard affects the airflow of freezer units and cannot be cleaned and sanitized.

Comments

-Walk-in cooler was at 4C.
-Upright cooler was at 4C.
-Prep cooler was at 4C.
-Front customer cooler was at 4C.
-Upright freezer was at -13C.
-Hot holding was greater than 60C.
-Shawarma undergoes a secondary cook step. Chicken was greater than 74C and beef was greater than 71C.
-Chicken kebab cooked to greater than 74C
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum of 71C required for proper sanitizing).
-3-compartment sink used for manual cleaning and sanitizing. Quats sanitizer was tested at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles labelled and tested at 200ppm.
-General food storage practices good at the time of inspection.
-Raw meats stored below ready-to-eat foods and foods stored off the ground.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until January 28, 2023.
