Observation (CORRECTED DURING INSPECTION): The back gate in the main manufacturing area was kept opened at the time of the inspection.
Corrective Action(s): Ensure the back gate is closed at all times to prevent entry of pests.

Observation (CORRECTED DURING INSPECTION): Cardboard was being used inside the upright cooler in the main manufacturing area. Cardboard was visibly soiled with grease and dirt.
Corrective Action(s): Discard the cardboard from the upright cooler. Cardboard is not food grade material.

Manufacturing facility with sweets/desserts up front.
- General sanitation is satisfactory.
- All handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All coolers (upright, display)r < or = 4C.
- All freezers (walk in, chest) < or = -18C.
- Three compartment sink available for manual dishwashing. Sanitizer available at 200 ppm Quat solution. Ensure to obtain Quat test strips to monitor sanitizer concentration daily.
- Surface sanitizer available in spray bottles at 200 ppm Quat solution.
- Large equipment (ie. mixer) sanitized at the end of the day, spayed with sanitize solution at 200 ppm Quat. Ensure to fully soak the equipment for min 2 mins with sanitizer before rinsing.
- Dry storage is satisfactory.
- No signs of pest activity. Orkin pest control report shows no pest activity. Inspects monthly.
- FOODSAFE certified staff on duty.
