Corrective Action(s): Remove droppings. Thoroughly clean all surfaces. Clean each night after closing, especially around the dough mixer, under the cooking equipment. Clean under and around items stored on the floor. Remove unuse equipment.

Observation: No sanitizer detected in the dishwasher. Cold buffet table is not working.
Corrective Action(s): Service the unit and sanitize manually in the meanwhile. Check with test strip daily. Discard food on the buffet table ofter two hours and store in ice. Cover items with lids.
