Observation: Chicken, beef, cut vegetables, salsa and containers of sauces stored in the sandwich close to the oven measured with an internal temperature of 10C. Staff stated the meats were stored in this cooler from last night.
Corrective Action(s): Staff discarded the chicken and beef. Move all other food items to a functional cooler. Do not store any potentially hazardous food in this cooler until serviced and temperature verified.

Observation (CORRECTED DURING INSPECTION): One ladle and tong stored beside the ice machine observed with food debris on them.
Corrective Action(s): Clean and sanitize aforementioned utensils. Ensure utensils are cleaned and sanitized before storing them. They must be protected from contamination during storage.

Observation (CORRECTED DURING INSPECTION): One tray of raw chicken breast was stored on top of cheeses and burrito wraps. Meat juice observed not leaked on to the other foods.
Corrective Action(s): Move the raw chicken breast to the lowest shelf away from any fruits, vegetables and ready to eat food. Follow your food safety plan for proper storage practices.

Observation: 1. Sandwich cooler near the oven measured with an ambient air temperature of 10C.
2. Rubber seal on the drawer cooler was partially broke off and the drawer could not be closed properly.
Corrective Action(s): 1. Service / fix the aforementioned sandwich cooler to ensure an ambient air temperature of 4C or less can be maintained in the cooler.
2. Replace the rubber seal and ensure drawer can be closed properly for maintaining the temperature. Correct by: July 4, 2023.

- 200 ppm quats sanitizer available in spray bottle.
- Low temperature dishwasher dispensed 100 ppm bleach sanitizer at plate level.
- Temperature records maintained and available for review.
- No pest activities observed at the time.
