Observation (CORRECTED DURING INSPECTION): Internal temperature of hot dogs stored within the hot holding unit was only at 41C (106F).
Corrective Action(s): Hot dogs were reheated at the time of inspection. Hot dog products must first be cooked to an internal temperature of 74C (165F) prior to being hot held at 60C (140F).

Observation (CORRECTED DURING INSPECTION): Reviewed cleaning and sanitizing procedures of juicer with staff. According to staff, the juicer is only being cleaned and sanitized at the end of each day.
Corrective Action(s): Since the juicer is used continuously throughout the day, it must be dismantled, washed, rinsed, and sanitized at least every 4 hours throughout the day.

Comments

Routine inspection conducted and the following were noted:
All cooler units less than 4C and equipped with thermometers.
Freezer units at -18C.
3 compartment sink satisfactory. Quats dispenser at 200ppm. Ensure quats test strips are available to monitor concentration of chemical.
Hand washing stations satisfactory.
High temperature dishwasher achieved a final rinse temperature of 72C at plate level. Each dishwasher unit is monitored daily to verify a temperature of at least 71C(160F) is achieved at plate level.
General sanitation had improved from previous inspections.
No pest activity noted within the unit and in the excess storage area.
