Observation (CORRECTED DURING INSPECTION): Bleach solution in sanitizing pail only as approximately ~10-50 ppm chlorine residual.
Corrective Action(s): Bleach solution was re-made and sanitizing pail was at 200 ppm. Ensure that you regularly switch out the bleach solution especially when it is dirty / soiled. Tables and countertops were re-wiped with the cloth inside the newly made bleach solution.

Comments

Follow-up inspection to report #JMAA-B6NT3K. The following observations were made:
- Dough mixer was being used at time of inspection - staff understood that it needs to be cleaned-in-place after use. This means removing debris and grime and thoroughly wiping with a cloth with sanitizer (e.g. 200 ppm bleach solution)
- Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Hair nets / caps in use at time of inspection
- Employees observed hand washing during inspection - good
- Potato presser in sanitary condition - good

Random spot checks will occur to ensure that you are properly hand washing and sanitizing. Make sure you always wash, rinse, and sanitize equipment after use.
