Observation (CORRECTED DURING INSPECTION): Noted knife at the bar area stored in the hand sink
Corrective Action(s): Do not store/rinse food equipment in the hand sink. Food equipment is to be put through the dishwasher.

Observation (CORRECTED DURING INSPECTION): A) No soap or paper towel available at the hand sink in the hookah preparation area/room
B) No soap available at the hand sink beside the dishwasher in the food preparation area.
C) Noted a knife in the hand sink at the bar area.
Corrective Action(s): Ensure all hand wash stations have soap, paper towel, hot and cold running water at all times. Do not store anything in the hand sinks.

Observation: Noted scoop for the ice stored in the ice at the ice well.
Corrective Action(s): Ensure scoop for the ice is stored outside of the ice at all times in a separate holder/container. Do not store the scoop for ice in the ice.

304 - Premises not free of pests [s. 26(a)]
Observation: Noted several fruit flies in the bar area and droppings in the downstairs hallway area.
Corrective Action(s): Remove clutter, boxes, empty bottles, spilled food/food debris and do a thorough cleaning in all the areas. Contact a pest control company and follow all recommendations made by the technician.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: A) Noted several empty boxes and clutter stored in the downstairs hallway area and two storage rooms.
B) Noted several empty bottles in the bar area
C) Noted spilled food/food debris (ie. fries, nachos, stains...etc) on the floor and on the counters in the food preparation/cooking area
D) Noted bellini machine on the floor of the bar area filled with coke. Operator said they were trying it out to see if it works for freezing liquids but it does not and need to have it fixed.
Corrective Action(s): Remove empty boxes and empty bottles from the premises. Clean up any spilled food/food debris/stains. Empty and clean the bellini machine.

Observation: A) Noted a leak in the hookah preparation room from above the ventilation system/mop sink area.
B) Noted the downstairs area has two separated rooms and the beer cooler that were not identified on the floor plans. Food is stored in these rooms.
C) Bellini machine was not noted on the bar area/floor plans.
Corrective Action(s): A) Fix leak.
B) Ensure the premises is set up as per the approved floor plans. Submit updated floor plans for any structural changes within 1 week.
C) Remove bellini machine from premises or identify on floor plans for approval.

Comments

- Unannounced routine inspection conducted during meeting scheduled with liquor inspector.
- All coolers 4C or less (under counter, prep x2, downstairs units, bar units,
- Freezers -18C or less (ice freezer and under counter)
- All other hand wash stations (not cited under violation code 401) were fully equipped and accessible.
- Premises does not do any hot holding. All foods are made per order.
- Menu is limited to sandwiches/paninis, drinks, chicken strips, chicken wings, yam fries, and baked goods/desserts obtained from approved sources.
- No evidence of unapproved menu items being sold at time of inspection.
- Quat sanitizer at source 200ppm.
** Ensure sanitizer is readily available in each food preparation area during food handling** Staff member confirmed that sanitizer is used in spray bottles and single use paper towels are used to wipe**
- High temperature dishwasher achieved 72.9C (with min/max probe thermometer).
