ATTENTION:
- Handsinks are all stocked. However, the handsink by the entrance of the kitchen (water activated by knee) is set at water temperature that is too hot. The handsink by the sushi prep area takes too long to draw hot water. Please adjust temperatures at these sinks so that employees can wash hands easily and frequently.
- Noted that employee on dishwashing duty put away dishes that had just come out of the dishwasher but still had food debris on it. Ensure that all dishes are properly scraped prior to running them through the dishwasher and wash dishes again if they are not adequately cleaned & sanitized.
- Ensure that potentially hazardous foods, including sauces, are not left at room temperature during non-rush hours (noted buckets of salad dressings on tray at room temperature)
- Do not leave the ice scoop (bar area) on top of ice machine. Keep it in a clean container to protect from contamination.

- Temperatures of refrigeration units are adequate (kept at or below 4C for coolers, -18C for freezers)
- 200ppm QUAT detected in sanitizer buckets
- High temp dishwasher reached 71C at plate's surface
- Glasswasher maintained 12.5ppm iodine residual
- Ice machine is maintained in a sanitary manner
- General sanitation is satisfactory but deep cleaning is required in hard-to-reach areas
