Observation (CORRECTED DURING INSPECTION): Batches of food were cooled improperly. Large pot of soup cooled in the sink and one large bucket of meat stored in the walk in cooler with the lid on. These items will not cool properly
Corrective Action(s): Cool food properly to achieve 60-21C in 2 hours and 21C to 4C in 4 hours. Soups and items need to be spread out in multiple shallow trays. Mixing with ice wands is needed to cool large items adequately. Do not put lids on items to be cooled. Date to be corrected: immediately

Observation (CORRECTED DURING INSPECTION): 2 batches of bean sprouts stored at temperatures measured 10-12C. These items need to be stored under 4C or less.

Observation (CORRECTED DURING INSPECTION): 1 cutting board found on top of the garbage can. This is not a sanitary manner to handle food contact surfaces. Operator stated the cutting board is to be thrown out.

Observation: -2 handwashing stations do not have hot water. Water is measured at 25-30C. This is not acceptable and needs to be corrected immediately.
