302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dishes/food contact surfaces were washed and sanitized using low temp mechanical dishwasher. However, at the time of inspection, no chlorine residual was detected at the rinse cycle of low temp dishwasher even after multiple runs. This could result in inadequate sanitation of food contact surfaces which may result in potential food contamination.
Corrective Action(s): Conduct manual dishwashing - wash, rinse, sanitize and air dry and use single use take out containers for dine in services until the dishwasher has been serviced. 200ppm bleach solution was prepared during inspection.

Observation (CORRECTED DURING INSPECTION): At the time of inspection, hot water supply was shut down at the handwash sink and paper towels were not available. Staff turned on the hot water supply and paper towels were stocked at the sink.
Corrective Action(s): Please ensure that handwash sink has supply of both hot and cold running water, liquid soap and single use paper towels during facility operation.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Low temp mechanical dishwasher was not run multiple times during inspection but no chlorine residual was detected for sanitation of utensils/dishes.
2. One of the taps of handwash sink is loose and results in water leak. Operator stated that plumber has been called and the handwash sink will be repaired by next week.
3. Chest freezers (x2) in the front service area had thick ice build up on the inner walls. This could result in inadeqaute cold air circulation within the refrigeration unit and can affect the temperature of food stored in it.
Corrective Action(s): Please ensure that all equipment/utensils/food contact surfaces are maintained in good working order.
1. Repair the low temp mechanical dishwasher IMMEDIATELY.
2. Repair the loose tap of the handwash sink by August 4, 2023.
3. Defrost/service the front chest freezers and remove the ice build up by August 11, 2023.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Coolers recorded at or below 4C.
- Freezers noted at or below -18C.
- Hot holding units in the front service area was recorded above 60C.

Storage:
- All food items were stored at least 6" off the floor.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Sanitizer spray bottle available and 200ppm bleach recorded.
- 3 compartment dishwashing sink available for manual dishwashing.
- General sanitation was okay.
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate (Exp Jan 27, 2028).
