Routine inspection conducted today - Operator was not working at the time of inspection
Operates when an order is received.
On average, operates 1 - 2 times/ month.
All food are purchased from approved sources at the time when order is received. No food was being stored at the facility at the time of inspection.
No freezer space required.
Dry goods were stored in two pest proof containers. Items noted in sanitary condition.
Often rents out unit #9 when working at Core Kitchen.
Reminded operator to always use a food-grade sanitizer on food contact surfaces and prep table before start of shift and during preparation. Reminded operator how to obtain the optimal concentration for bleach sanitizer solution (2 tsp. of bleach per 1 L water).
Operator knows to check that the high temperature dish machine must reach 180F at the rinse cycle to ensure it is operating optimally. Otherwise, she knows to use the 2-compartment sink for manual warewashing.
