Comments

- General sanitation satisfactory. Some attention needed at edges of floor where floor meets walls.
- Handsink in kitchen and bar supplied with hot and cold running water, liquid soap and paper towel.
- Coolers were operating at acceptable temperature (4C or colder):
- Walk-in cooler 3C
- Prep cooler 2C
- Glass door cooler 1C
- Freezers were operating
- Walk-in freezer (basement) -18C
- Chest freezer (basement) -20C
- Single door upright freezer -26C
- 2 door reach in freezer -16C
- Foods were being re-heated in the oven at the time of the inspection. Hot holding units were being pre-heated prior to food being transferred.
- Bleach sanitizer solution present in spray bottle for sanitizing food contact surfaces. Concentration measured 200ppm chlorine.
- Ice machine appears clean and maintained.
- Operator has valid Foodsafe level 1 certificate.
- No signs of pest activity noted at the time of the inspection.
- High temperature dishwasher was operating. Final rinse measured 73.9C at the dish surface.
