Observation (CORRECTED DURING INSPECTION): Dempster's Tortillas - packages unsecured and chewed open by rodents. Rodent droppings noted inside of packaging.
Corrective Action(s): Items confiscated and removed from display shelving.

Observation: Wiping cloths are not bing properly stored.
Corrective Action(s): - Use 200ppm Quats solution and make as per manufacturer's instructions
- Change sanitizing solutions in sinks and buckets every couple of hours
- Change sanitizing solutions in bottles daily
- Use test strips to measure the concentration of sanitizer.

Observation: Mice noted on glue traps. Heavy presence of rodent droppings noted throughout facility. (ie: shelves, below/under equipment, behind kick plates, etc.)
Corrective Action(s): Certified Pest Control company is required to provide rodent control services. Pest control reports are to be kept on site for review. Action plans and recommendations are required to be provided on the service reports. asap.

Observation: Sanitation: Food/debris noted along walls, behind/under equipment, behind equipment kick plates, etc. department display shelving unorganized. Unused equipment/items/shelving noted stored behind displays and in storage areas throughout the store.
Corrective Action(s): Thorough cleaning and organization required. Pull all items/displays away from walls - clean and organize entire facility. Remove all kick plates from equipment - clean all droppings and food debris. Organize all departments - Remove all unused equipment/displays from the facility to reduce harborages. Store all items off of floors! asap.

Complaint received: October 9, 2019. re: Rodent concerns. Tortilla packages chewed/rodent droppings noted inside the product.

- Storage area: All food items are required to be stored on shelves, up off of floors!
- Keep food safe and help prevent cross-contamination from pests:
- Wash and sanitize all food contact surfaces
- Keep all food in containers with tight-fitting lids
- Wipe up spills right away
- Wash floors with a suitable floor cleaner every day
- Routinely scrub all corners and hard-to-reach areas such as under and behind equipment
- Routinely check your premises for signs of pests
- Remove all evidence of pests and disinfect the affected areas with hot water and bleach
- Keep doors and windows closed or screened.
- Follow these points:
- Keep doors and windows closed or install screens
- Seal or patch any holes or potential entry points on the exterior of the building
- Install weather-stripping underneath exterior doors
- Clean floors routinely especially underneath and behind all equipment. Seal gaps behind sinks and walls.
