Observation (CORRECTED DURING INSPECTION): Mechanical Dishwasher: No disinfectant detected. Air pockets noted in dispensing lines. Wiping cloths are not being properly stored.
Corrective Action(s): Monitor disinfectant solution. Test daily. Wiping cloths used on food contact surfaces are to be stored in a disinfectant at all times.

Comments

- Temperature Control: Internal cook temperature reference chart/info provided. Probe thermometer is to be kept on site for internal monitoring of cooked food items.
- Wiping Cloth Storage:
- Use 100 ppm bleach - 30 ml (2 tablespoons) of 5% unscented bleach in 4.5 litres (1 gallon) of water. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: No "double stacking" of food storage containers is permitted when saran wrap is being used to cover food items.

Facility is to be kept clean and organized. Store all items in designated areas, off of prep/counter space.
