Observation (CORRECTED DURING INSPECTION): Preparation cooler in front of cooking line measured at 12.2'C with probe thermometer. Temperature log is not maintained on site for today. Staff stated that all foods are stored in the walk-in cooler overnight and were placed in this cooler less than 2 hours ago. All potentially hazardous foods were transferred to the functioning walk-in cooler during inspection.
Corrective Action(s): Do not store any potentially hazardous foods in the aforementioned cooler until it is verified functioning at or below 4'C to adequately store potentially hazardous foods. Obtain a thermometer to insert the cooler to verify cooler temperature throughout the day (as per approved food safety plan). Ensure the top insert cover is placed on at all times to prevent temperature fluctuations.

Observation: General sanitation is unsatisfactory with food and/or grease debris build-up in the following areas:
- All floors in the kitchen
- Ventilation canopy
- Inside preparation cooler doors
Corrective Action(s): Degrease, clean and sanitize aforementioned areas. Conduct regular deep cleaning, especially in hard to reach areas, to prevent build-up of food debris/grease. Ensure to conduct regular degreasing of ventilation canopy in between regular maintenance cleaning.

Observation: Preparation cooler in front of cooking line measured at 12.2'C with probe thermometer. All potentially hazardous foods were transferred to a functioning cooler during inspection and staff stated they would contact repair company to fix the cooler.
Corrective Action(s): Place a thermometer in the cooler to monitor temperature daily and accurately. Do not use this cooler to store potentially hazardous food until verified functioning by the health inspector.

Observations:
- Walk-in cooler at 3'C
- Preparation coolers (X2) at or below 4'C
- Under-counter freezer at -19'C
- Bar cooler at 4'C
- Stand-up freezers at or below -19'C
- Temperature logs are maintained (up until end of April). Ensure to maintain temperature logs for all months moving forward.
- All food observed stored at least 6 inches off the floor - good!
- Raw meat stored away from ready-to-eat foods
- No hot-holding on site
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- Staff washroom not in use. Public washrooms observed supplied with hot and cold running water, liquid soap and paper towel at hand washing stations.
- High-temperature dishwasher measured at 72'C at plate surface (above minimum required final rinse temperature of 71'C)
- Bleach sanitizer in labelled spray bottle measured at 200 ppm chlorine concentration with test strip
- 2-compartment sink available with drain plugs
- Ice machine observed in good sanitary condition
- No signs of pest activity - major improvement noted, good!
- Professional pest control company is contracted. Pest reports verified during inspection.
- FOODSAFE Level 1 equivalent trained staff available on site
- Permit posted in a conspicuous location on site
