Observation (CORRECTED DURING INSPECTION): One container of green sauce had a dead mosquito floating in it in the preparation cooler.
Corrective Action(s): The sauce was discarded at the time of inspection. Ensure the food containers are covered when not in use to prevent contamination.

Temperatures:
Coolers are maintaining 4 degrees Celsius or less.
Freezers are functional.
Thermometers are available.
No hot holding units were in use at the time of inspection.

NOTE: ensure temperature logs are maintained. Temperatures should be checked and documented regularly for reference.

Sanitation:
Hand washing sinks are equipped with hot and cold running water, liquid soap, and disposable paper towels.
High temperature dishwasher achieved 72 degrees Celsius at the dish surface after the final rinse cycle.
100 ppm chlorine residual sanitizer was available. Bleach was available on site.
Next door unit is used for storage of miscellaneous items such as chairs, tables, storage containers, etc. Two coolers and 1 chest freezer are also stored in the area. Ensure the floor is kept clear of clutter.

No pest activity noted at the time of inspection. Ensure the dry storage areas are kept clear of clutter so pest activity can be monitored regularly.
