Observation: New high temperature dishwasher installed. However, the dishwasher only registered 63C at the plate level. 5 runs were checked with the same temperature registered. At least 71C is required to properly sanitize the plates and utensils.
Corrective Action(s): Service / fix the dishwasher to ensure at least 71C is registered from the dishwasher. In meantime, manually wash and sanitize all utensils and equipment. Corrected by: Aug 12, 2021.
