-1 Chafing dish observed to have both gas burners out underneath -temperature of rice at 44 deg C

Note: buffet service is from 1130am to 230pm and all leftovers are discarded at end of service

For buffet service operator is not following First-in First-out rule -worker observed placing new rice over old rice in chafing dish
