Observation: 1) Raw eggs were stored above tomatoes.
2) Bleach was too strong - test strip bleached out.
Corrective Action(s): 1) Ensure raw foods (meats and eggs) are stored below or separately from ready-to-eat foods to prevent potential contamination of foods.
2) Ensure bleach is maintained between 100ppm to 200ppm. Concentrations in excess of 200ppm are not considered food grade and may be toxic for human health.

Comments

-Follow-up inspection to September 26, 2023.
-Unfrozen meat cones are either used up by the end of the night or discarded. Cones are no longer placed in the cooler for use the next day.
-Donair meat undergoes a secondary cook step to greater than 74C prior to hot holding.
-Hot holding of foods was greater than 60C. Foods are no longer reheated in the hot holding unit.
-Sanitizer spray bottle was properly labelled. Ensure labels are checked on a regular basis and relabelled as needed.
-FOODSAFE Level 1 valid until July 20, 2028.
