Observation: 3 door pizza prep cooler ambient air temperature 8 C. Internal temperature of cheese at 7.5 C and internal temperature of cooked chicken at 7.5 C.
Corrective Action(s): Potentially hazardous foods must be stored at 4 C or below. Adjust temperature of cooler so that it is at 4 C or below or re-locate foods to a cooler that is able to maintain a temperature of 4 C.

Hand sinks equipped with hot/cold running water, liquid soap and single-use towels.
Walk-in cooler at 4 C or below.
Walk-in freezer at -18 C or below.
Standing cooler in back at 6 C - only used for non- potentially hazardous foods.

Pizza slices held at 45 C - discard after 1 hour as per your food safety plan. Records should be maintained.

Quats sanitizer registered at 200 ppm from dispenser.
*Reminder, all bottles must be refilled with a fresh solution as needed.
3 compartment sink available for dishwashing but not in use at the time of inspection.

Reminder, transfer all leftover canned food into food grade containers.
