Observation (CORRECTED DURING INSPECTION): Observed knives stored in between cracks of two counters, where it is extremely difficult properly clean.
Corrective Action(s): Required operator to remove the knives, clean and sanitize prior to reusing them. Ensure to store knives in/on a clean holder or storage container. Operator removed the knives and put them in a dishwasher at the time of inspection.
